    At the helm of the restaurant, chef Florimond Hannoteau describes his style as that of a bon vivant who likes to put his heart into his dishes. A native of Lille and a prodigious self-taught chef, he emphasizes the freshness of local produce and a land-and-sea approach that he's particularly fond of.
