  • A philosophy rooted in the earth

    At Les Labours, our culinary philosophy is grounded in showcasing our own harvests. Thanks to close collaboration between our kitchen team and our garden crew, we’ve achieved self-sufficiency for select products such as garlic, squash, microgreens, and Gorria peppers. This approach allows our menu to evolve naturally with the seasons, reflecting both the abundance of our land and the creativity of our chefs.

  • Chef Patrick Dubé

    Rooted in his terroir and driven by passion, he brings over 25 years of culinary experience to the table, including time at James Street South in Belfast (1 Michelin star, 2004–2005) and a training stint at Château Lynch-Bages in Pauillac, France (2 Michelin stars, 2015).

    From 2012 to 2018, he served as Executive Chef at Le Saint-Amour in Québec City, ranked for five consecutive years among TripAdvisor’s Top 10 Fine Dining Restaurants in Canada.

    In 2018, he won the People’s Choice Award at the Festival gourmand de Neuville, and later opened Madame Chose (Galerie Gourmande, Québec), winner of the Bronze Trident for design—ranked the 3rd most beautiful restaurant in North America.

    Named Health-Focused Chef of the Year in 2024 by the SCCPQ, he will be inducted as a Disciple of Escoffier in Québec City in September 2025. He also won the Chef Métro GP competition (1999) and teaches part-time at the École hôtelière de La Malbaie.

    Christian Beaupré

    Twice a week, our sommelier is on hand to guide guests through discoveries and pairings. With the support of over 40 specialized agencies, the wine list is updated regularly to stay aligned with trends and evolving tastes.

    Winner of the 2024 Best of Award of Excellence, our wine cellar is ranked among the top 25 wine destinations in Quebec and recognized as one of the 1,531 best wine programs in the world, according to Wine Spectator. In 2025, this will mark the fifth Best of Award in the career of our sommelier Christian, who is now setting his sights on an even greater achievement: earning the prestigious Grand Award in 2026.

    Our Wine Cellar

    With more than 1,000 carefully curated selections, whites, reds, sparkling, rosés, dessert wines, fortified, natural, and organic, our wine cellar reflects the spirit of our table: generous, refined, and deeply rooted in quality.

    Whether at Le Bercail, Les Labours, or during banquets, wines from Quebec and Canada hold a place of honour. They reflect our commitment to showcasing the land and pair beautifully with our cuisine to elevate every culinary experience.

    Beyond our borders, the wine list explores three major wine regions: France, Spain and Italy. Designed to evolve over time, the list features a wide range of vintages, from $50 to $5,000 per bottle, for a total collection of approximately 11,000 bottles.
