    Founded by Carrie Jackson and renowned chefs Connie DeSousa and John Jackson, this welcoming restaurant is proudly rooted in Calgary and led by a majority-female team. The menu draws inspiration from Connie’s Italian and Portuguese heritage, while celebrating seasonal, thoughtfully sourced ingredients.

  • A Story Rooted in Passion, Community, and Craft

    CHARCUT was born from a shared dream, shaped over more than two decades of experience across New York, San Francisco, Italy, and Portugal. The idea came to life during a journey Carrie, Connie and John called “40 Farms in 40 Days,” which took them across Alberta to meet with farmers, ranchers, and artisanal producers.
