Free rein at Les Labours restaurant

On six Thursdays evenings in May and June, top guest chefs will take turns creating an exclusive gastronomic experience at Les Labours restaurant. Chefs will be given free rein to create unique menus in collaboration with our Executive Chef Patrick Dubé. While staying true to the essence of their respective restaurants, they will showcase artisans and products from the Charlevoix region and create fresh, seasonal dishes before your eyes. To accompany these exceptional dinners, our sommelier Christian Beaupré and his acolytes will suggest daring wine, beer, and cocktail parings. Live music and entertainment will be featured on our terraces.

May 2: Jean-Luc Boulay - Le Saint-Amour

Chef Jean-Luc Boulay will honour us with a visit to kick off the series in style. Chef at Le Saint-Amour, an institution and not to be missed restaurant in Old Quebec City, he serves French haute cuisine inspired by the terroir's finest regional produce, in addition to promoting Quebec gastronomy beyond its borders!

May 9: Éric Lessard and Charles Gignac - Le 101 Restaurant de Quartier

Not one but two chefs will take over the kitchens at Les Labours for this second evening: Éric Lessard and Charles Gignac. These two veterans of Le Saint-Amour restaurant now work at Le 101, a contemporary family restaurant located in Quebec City's Saint-Roch district. In the kitchen, Charles dishes combine sharing and pleasure, while his pastry chef Éric takes diners back in time with the flavours of his desserts. Don’t miss it!

May 16: Émeline Péro and Laurent Gauthier - Les Botanistes

Les Botanistes is a restaurant like no other, where the plant kingdom reigns supreme. Vegetables, fruit, and herbs take centre stage on plates that also contain carefully selected proteins. Émeline Péro and Laurent Gauthier are looking forward to the surprises that our gardens have in store to create a local and seasonal menu. Vegetable discoveries on the horizon in Charlevoix!

May 23: Benoît Poliquin - AlbaCORE

Benoît Poliquin has more than 25 years of experience in the restaurant business in Quebec and the United States. At his neighbourhood restaurant AlbaCORE in Saint-Jean, Quebec City, he offers innovative cuisine focused on raw and cooked seafood as well as seasonal vegetables. He describes his restaurant as casual, friendly and refined - and we are sure he will bring that atmosphere all the way to Baie-Saint-Paul.

June 13: Arts de la table evening with our chef Patrick Dubé and painters from Galerie Iris

After more than 25 years in the kitchen and travels to Europe in search of new techniques and cultures, Patrick Dubé decided to settle in Charlevoix. As chef of Les Labours restaurant, he can harvest ingredients right from the garden to offer a farm-to-table menu. For this unique evening, the chef will cook while painters Annabelle Marquis and Céline Brossard create live works of art. It promises to be an eye-opening evening!

June 27: Stéphane Modat - Le Clan

Chef Stéphane Modat is truly passionate about the local products that surround him, so it is only natural that he closes the series of evenings in the best possible way. In his restaurant Le Clan, he advocates for a gourmet Québec, highlighting local artisans, foragers, and the best local products, cultivating locavorism to the max. We can't wait to discover what Le Clan is secretly cooking up for us at Les Labours.
