Matthew Swift has been working in kitchens in Ontario and Quebec for almost two decades, alongside renowned cooks and chefs. Before leaving the mainland, Matthew had the pleasure of heading the kitchen of Joe Beef, a beloved Montreal institution.
Matthew fell in love with Newfoundland and Labrador on his first trip to The Rock in 2017. He was inspired by its people, food, produce, history and breathtaking landscapes. His endeavours to offer all-Canadian fare using the best of what Newfoundland and Labrador has to offer.
