Originally from northern France, Chef Hannoteau brings extensive experience, particularly from traditional brasseries, along with a deep passion for the art of cooking.
Since arriving in Montreal in 2018, Chef Hannoteau quickly integrated into the local culinary scene. His knowledge of local ingredients, understanding of regional work habits, and established relationships with suppliers are key assets that enhance his approach to the kitchen. A respected member of the Académie Culinaire de France and a culinary advisor for the Chaîne des Rôtisseurs, Chef Hannoteau adds invaluable expertise to Le Boulevardier.
Chef Florimond favours a short supply chain approach, highlighting local and seasonal products in his culinary creations. His mastery of traditional French cooking techniques is reflected in his authentic and refined cuisine, promising a high-quality gastronomic experience for Le Boulevardier’s guests.
His arrival at Le Boulevardier coincided with the Montréal en Lumière event, where the restaurant had the pleasure of hosting two renowned French chefs: Michelin-starred Chef Matthias Marc from Substance Paris, and Adrien Cachot, a finalist from Top Chef France Season 11. The three evenings with these culinary talents were fully booked, offering guests a unique and unforgettable dining experience.

Here’s another event sure to delight your taste buds! During a stay in Charlevoix, Chef Hannoteau discovered Les Faux Bergers, a renowned restaurant in the region. Impressed by their commitment to local sourcing, the determination of Chef Sylvain Dervieux, and the overall experience, Florimond was eager to bring this experience to his guests at Le Boulevardier!
On May 31 and June 1, the originality of Les Faux Bergers will combine with the classic elegance of Le Boulevardier, creating a culinary experience sure to impress. The evening will feature a 6-course menu, with both chefs sharing their passion, working together to offer an unforgettable dining experience. The price will be $125, and a wine pairing will also be available.
Starting May 2 through June 27, Thursday evenings will be a celebration of gourmet cuisine at Les Labours! Chef Patrick Dubé will be joined in the kitchen by celebrated chefs from Québec City. Here is the impressive lineup of chefs who will be in the kitchen:

Guests will be treated to the culinary inspirations of the chefs, featuring local seasonal ingredients. The evening will offer a prix fixe menu at $100 ($150 for the evening with Chef Boulay), with wine or beer pairings (available at an additional cost), curated by our sommelier Christian Beaupré. Live music and other surprises will also await guests, adding to the excitement of the evening.
